Moringa leaf powder recipes
1 cup of beans, (baby limas, red beans or pintos)
2-3 cups of water
2 cloves of garlic, crushed
1 small onion
2 medium tomatoes
½ cup of shrimp/ chicken
1 cup fresh Moringa leaves (1 table spoon of moringa oleifera herb powder)
1 Tbsp of fish sauce, or to taste
Add salt and pepper to taste
Strip the moringa leaves from the stems to remove big leaflets. This can be done easily when you rap in wet cloth over night Boil the beans until tender. Then sauté the onions, garlic and tomato using frying pan. When beans become tender add the tomato, onion, garlic to the beans. Now add fresh moringa leaves and boil for 10 minutes. Then add fish sauce, salt to taste. In case you are using moringa oleifera dried leaf powder you can add a table spoon of it and boil it for 5 minutes before serving.
Chopped Moringa leaf: 6 Cups
Chopped Onion: 1 Cup
Red Chillies (Halved in to two): 4 Nos
Mustard seed: ½ T-Sp
Grated Coconut: 1Cup
Cumin Powder: ½ T-Sp
Turmeric Powder: 1/2 T-Sp
Green Chilli: 4 nos
Garlic: 4 pod
(Coconut) Oil: 1 Tbl Spoon
Method:
Coarse grind ingredients 5 to 9 and keep aside
Heat oil in a deep frying pan; then put mustard seeds till they splutter
Add chopped onions and fry it until color changes. Then add red-chillies
Add cleaned moringa leaves & sauté for 2-3 mts and close the lid to 10 mts till it cooked
Pour the grinded ingredients to the cooked leaf and stir well
Close the lid and cook for another 2-3 mts
In this recipe moringa leaves are cooked for 10-12 minutes only and this ensures that the nutritional values of moringa leaves are not lost. If you are using moringa leaves powder then it is quite easy.
